Field extraction generates structured key-value pairs from the schema you define, and one fieldSchema can be reused across analyzers. It takes two analyzers here, because a custom analyzer derives from only one base analyzer and the four bases are document, audio, image, and video. Defining the fields twice lets the two records drift apart. A classifier routes content to an analyzer but does not define the output shape.
